To make this fine Spanish aperitif, white wine is macerated with herbs (eg elderflower and sage) prior to blending with long-aged sweet wine. It is then topped up with sugar and alcohol and allowed to age in French oak for more than 24 months.
Dark tawny color with some ruby red reflection. On the nose it brings out all the herbal notes from the sage and elderflowers. On the mouth the body is generous and it adds smooth sweetness balanced by a mild bitterness. Caramel and toasty oak aromas add complexity on its persistent finish.
Try it with a little ice on a hot summer's day!
